Jar Cakes

This recipe came from Mom. It's really yummy and would make great gifts! She put them together and gave them with a little piece of holiday cloth. Very nice!

First mix dry ingredients in bowl:

3 1/3 c flour
1/2 t salt
1/2 t baking powder
2 t baking soda
2 t cinnamon
1/2 t ground clove

In another bowl mix in order:

2/3 c butter flavored Crisco
2 2/3 c white sugar
4 eggs
1 3/4 c unsweetened apple sauce
2/3 c water
1 t vanilla

add dry ingredients.
Fold in 1/4 c raisins
and 2/3 c nuts

Grease 8 wide mouth jars very well. Place one cup of batter in each. Make sure the rims are clean before baking! Place cookie sheet into oven. Place jars, without lids, onto the cookie sheet. Do NOT let jars touch.
Bake at 325 for 35-45 min.

While cakes are cooling bring lids and rings to a boil. Seal with rings and lids and listen for the pop!

2010 Cookie Bake

Taren is joining me tomorrow afternoon to make the cut outs, get them cut out and baked. That will give us more time to make them lovely!

Butter Cream

Cream
1/2 c butter/icing
2 1/4 t vanilla
3 T milk
Add
4 1/2 c 10x

Cream Wafers

2 c flour
1 c butter
1/3 c whipping cream

In medium bowl, mix and then chill one hour. Then, roll to 1/8 thickness and cut with smallest cookie cutters. Place on sheets and bake at 375 for 7-9 minutes. Cool.

Filling

3/4 c. 10x
1/4 c butter
1 t vanilla (or other extract)

Mix then color with desired food coloring. Spread scant icing to make sandwich.

makes about 5 dozen

2009 Christmas Bake

....will soon be here! Lots of family coming in this year so I will be sure to make extra cookies! The bake will be a great start to the cookie collection! Now what shall we make.....hmmmm

Peppermint Chocolate Creams

I found a recipe in one of the Gooseberry Patch books for
Peppermint Chocolate Creams that I just had to try. Am I glad I did! Here is the recipe if you would like to try:
1 7 oz. jar of marshmallow creame
2/3 c. softened butter
1 t vanilla
3/4 t peppermint extract
6 c sifted powdered sugar
8 oz of chocolate candy coating
In a large bowl, beat the marshmallow creame, butter and extracts untill well blended. Gradually add powdered sugar until smooth. Shape into small balls and place on a cookie sheet lined with wax paper. Chill at least one hour.Melt chocolate. Dip each ball in chocolate and then return to wax paper. Chill until chocolate hardens. Store in and airtight container in a cool place. Makes about 9 dozen.I also drizzled a little white chocolate over the tops for flare. These are very easy to make and very good!
